What Really Touches Your Food? Conventional, Organic, and Home-Grown Microgreens Explained

Most of us walk into the grocery store, grab a container of greens, and never really think about everything that happened before those leaves reached the shelf.


How was the crop grown? Were pesticides used? What substances are permitted on organic crops? Were residues still detectable when the food reached the consumer? And what changes when you simply grow the greens yourself?


The answers are more complicated than saying conventional is bad and organic is good. But there is one major difference that is surprisingly simple: when you grow your own food, you can control what goes into the growing process.

Conventional Produce: Regulated Does Not Mean Nothing Was Applied


Conventional farmers have access to a wide range of insecticides, herbicides, fungicides, and other crop-protection products. That does not automatically make conventional produce unsafe.


Before pesticides can be used on food crops, the EPA establishes limits called tolerances. These are maximum residue levels allowed on food, and EPA must determine that the allowed exposure meets its legal standard of a reasonable certainty of no harm.


That distinction matters. A pesticide residue being detected does not automatically mean the food is dangerous. But within the allowable limit is also not the same thing as nothing is there.


USDA's 2024 Pesticide Data Program found that more than 99 percent of sampled commodities had residues below established EPA tolerances. At the same time, only 42.3 percent of the samples had no detectable pesticide residue.


Those two facts can both be true. The food can comply with federal safety standards while still containing a measurable pesticide residue. For people trying to reduce unnecessary chemical exposures where practical, that distinction is worth understanding.


USDA Organic: A Much More Restricted Toolbox


Organic farming changes the equation considerably. USDA Organic rules sharply restrict the use of synthetic substances. But one of the biggest misconceptions about organic agriculture is that it means absolutely no pesticides or synthetic substances are ever used. That is not true.


Federal regulation 7 CFR §205.601 contains a specific list of synthetic substances that may be used in organic crop production under defined conditions and restrictions.


The list includes substances such as hydrogen peroxide, certain chlorine materials, peracetic acid, sulfur compounds, copper compounds, horticultural oils, insecticidal soaps, potassium bicarbonate, and others.


Context is critical. Some of these materials are sanitizers. Some are restricted to very specific applications. Some cannot directly contact edible portions of crops. Some can only be used after other pest-management methods have proven insufficient.


So it would be misleading to look at the National List and assume an organic farmer is spraying every substance on your salad. But it would be equally misleading to say that organic means nothing synthetic was involved.


Organic agriculture gives consumers a much more restricted production system. It does not necessarily give them complete knowledge of every input used on an individual crop.


Home-Grown Microgreens: Change the Question


Growing microgreens at home creates a third option. Instead of asking how much pesticide residue is allowed, you can ask why apply the pesticide in the first place?


If you grow microgreens using untreated seed appropriate for edible production, clean growing medium, potable water, clean trays, and no pesticides, herbicides, or fungicides, then there is no agricultural pesticide application during your growing process.


That means you are not simply trying to stay below a pesticide tolerance. You have removed that source of pesticide exposure from cultivation altogether.


  • You choose the seed.

  • You choose the growing medium.

  • You choose the water.

  • You decide whether fertilizer is used.

  • You decide whether any pesticide is used.

  • You know when the crop was planted and harvested.

  • You know how it was handled before it reached your plate.


That level of transparency is difficult to duplicate with food that traveled through a commercial agricultural and distribution system.


But Home-Grown Does Not Mean Risk-Free


There is an important reality check. We would never tell someone that home-grown microgreens are automatically free of every possible contaminant. Microgreens are food, and food safety still matters.


USDA Agricultural Research Service researchers have demonstrated that Salmonella, E. coli O157:H7, and Listeria monocytogenes can transfer from contaminated seed into growing microgreens.


That is why responsible home growing should include reputable seed sourcing, clean water, clean equipment, good hand hygiene, proper storage, and careful growing practices. You cannot control every environmental variable, but you can control a remarkable number of them.


The Real Difference Is Control


This is not an argument that Americans should stop eating vegetables because some conventional produce contains detectable pesticide residues. Eating vegetables is important. It is also not an argument that organic farming is somehow fake. Organic standards meaningfully restrict what growers can use.


The lesson is simpler. Conventional agriculture generally offers growers the broadest pesticide toolbox. Organic agriculture operates under a much more restrictive set of rules, although approved substances may still be used. Growing pesticide-free microgreens at home allows you to remove agricultural pesticide application from your own growing process and personally control many of the inputs between seed and plate.


That is one of the reasons we believe learning to grow food is such a valuable skill. At Ferpher Farms, our goal is not to make people afraid of their food. It is to help people understand it.


Because once you know what can go into growing your food, you are in a much better position to decide what you want going into yours.


Grow with knowledge. Grow with confidence. And whenever possible, grow some of it yourself.
